Used Bongard PANEOTRAD V3 dough divider-rounder – Dough dividing and shaping

General description

The used Bongard PANEOTRAD V3 dough divider-rounder is designed for dividing and shaping dough in artisan bakeries. Originally developed for traditional French breads, it combines several preparation operations in a single piece of equipment while preserving the dough’s structure.

Its dividing and shaping process limits the degassing caused by traditional methods. This promotes the preservation of the alveolar structure desired for baguettes, traditional breads, and various bakery specialties. The model studied, identified as V3+ on its manufacturer's plate, was manufactured in December 2013.
